Beets. Can I cut the leaves at will for salad etc or will it affect the beet? Can I actually chop the leaves and the beet will still grow?

You should leave about 3/4 of the leaves on a beet, the energy is gathered from the leaves and is deposited in the root ball (the beet itself). you can continue to harvest up to the time it puts up the final 'stalk' that will produce flowers and turn to seed. . Same applies to turnips, carrots, and the like.
