I like to roast my chicken simply - I stick a couple of sticks of celery, half an onion, some fresh thyme if I can get it, and half of a stick of butter up inside the chicken. Sometimes I put barley or rice and a bit of chicken stock around the chicken. Then I salt and pepper the outside, and cover it up and roast it breast down until it's almost done. This way, the breast is nice and juicy. Then, for the last 30 minutes, I uncover the bird, turn it breast up, pat it dry, butter it, and add more salt and pepper and a little dried thyme. Then I cook it until the exterior is nice and crisy and the inside is done. Delish!
