They cook too long? The condition they're in when you pull them from the oven isn't always the condition they're in when they're cooled. I imagine they still do some internal cooking after you pull them, so the earlier you pull them, the softer they'll be.

Overcooked it sounds like to me.

If they weren't overcooked & you followed the recipes properly, next time try putting a tsp or tbsp (depending on the yield) of cornstarch. It should help initiate that chewy texture you desire.

I hope you used real butter-not margarine and all brown sugar-no white sugar. Better to undercook than overcook for any cookie.
