Is it normal for an LDS convert to have to pay years worth of back - tithing (from when they were not members)?

No, it is not normal. If someone is telling you that, then they are misleading you. Tithing is only to be paid on income one receives after one is baptized. If a convert wanted to pay tithing on income received prior to joining, then they may, but it is not required and, for most people it would represent an unreasonable burden. So, no, that is not required nor should it ever even be asked of anyone.
