I would say 'ok' until 2nd June, and 'edible' so long as it retains its physical form.

Don't screw around with eggs. They can make you sick if they are not fresh. Not worth it. Throw them out.

As far as I understand it, eggs are given a grade ("AA," "A," "B") when they are packaged and sold. The "best by" date is how long you can expect those eggs to remain at the grade you bought them. For example, if you buy a carton of AA Large Eggs with a "best by" date of June 1, then those eggs will be AA until June 1. Eggs will continue to be edible after that date as long as the shells have no cracks or punctures. I've heard that an egg is good for about a month after you buy it. More than a month and the eggs starts breaking down.

well that all depends on what you want to do with them. If you want to make meringue, then they are best the moment they come out of the chicken's bottom! fresh as fresh can be! Same with poached eggs - they keep their shape in water if they are fresh fresh fresh. But if you want to use them to throw at people you do not like, then they are probably best around November next year

good question! eggs are perishable, but they perish sloooowly... "best used by" dates mean just that, prior to that date the the eggs are freshest. eggs do not instantly become unusable, for instance, one minute after midnight the day after best used by date. to see if an egg is still fresh, float it in a bowl of water. if the egg lays on its side at the bottom, it's still quite fresh. if the egg rests on it's end on the bottom of the bowl, it's an older egg, but still safe to use (gases have begun to build up inside) if the egg lingers in the water, without touching the bottom of the bowl, or floats on top, pitch that puppy! the egg has decayed inside

my mother in law keeps eggs longer than her kids, although i think it's affected her mind. i'd probably throw them out within a month or so. btw, i told my doctor that my pills had expired and he said they'd be good for a year or two. i know, pills aren't eggs. eggs really aren't dangerous until we do kooky things like introduce bacteria (say, an unclean spatula).

What do the “sell by” or “best before” dates on the carton really mean? Since all Grade A and Grade AA All-Natural Eggs are USDA inspected, the “sell by” date represents the maximum days allowed by federal and/or state laws between the actual date the eggs were inspected and packaged, and the date when they should be sold from the retail store. “Best before” dates represent the recommended date by which to use the eggs while they’re still Grade A or Grade AA quality (when properly refrigerated). The date is beneficial in two ways. First, it provides the customer a guideline as to when the eggs should be sold from the retail shelves or consumed at their best quality. Second, it provides store personnel with a visual means to implement proper product rotation. How long after the “sell by” or “best before” date can I eat the eggs? Under proper refrigeration there isn’t a definite timetable for defining an egg as either good or bad. Many eggs are still good (from the standpoint of nutritional content) for weeks, maybe even months after the code date. However, visual appearance and odor should be the determining factors as to whether or not an egg should be consumed. http://www.grocerycouponguide.com/articles/eggs-good-bad-organic-or-cheap/

It just means they are fresher before that date. I remember when there were no "best by" dates and you went by smell; LOL!

IT MEANS THOSE EGGS SHOULD BE EATEN BEFORE JUNE OR IT MIGHT SPOIL.
