Saying that Christians are an uneducated, intolerant, group of bigots because they are a Christian is judging. Saying that you think that most Christians are an uneducated, intolerant, group of bigots is an opinion.

An opinion is simply your view, whatever that may be - but independant of what the other person may feel or think. Judging is when the independance disappears and you decide what is right for another, and coming to a fixed view about what is, however an opinion is an open view.

Judging people / groups of people is usually considered offensive because of the use of gross generalisations, or statements made without any reasonable evidence. an opinion is usually voiced in a non aggressive way as well. it also depends on how the subject takes it!
