On a 3.5 hour nonstop flight once, I told the woman sitting beside me that I appreciated her concern, but was not interested in hearing about her religious beliefs. She said, "Oh!" There was an awkwardness so I asked her the reason for her travel. She told me she was on her way to visit family, so we talked amiably about families for awhile.

If it is a problem and you want to not be rude then point at your ears move your hands around as if your doing sign language as if you can not hear or talk. If they start signing back just smile and say that was my way of saying I do not want to hear what you have to say. Please leave me alone. If they continue to talk then there is no further reason to not be rude.
