Only 3-4, 7-8 days is too long. Smell it fresh and smell it at 6-7. You'll know!

Butcher paper wrapped 1 to 2 days. Platic wrapped 2 to 3 days. Zippered plastic bag 3 to 4 days. These numbers are for fresh, deli sliced, properly refrigerated product.

Meat should only be kept 3 days in the fridge and 3 hours at room temp. Longer if you freeze it.

Assuming it has been kept refrigerated deli roast beef meat 7-8 days old is certainly not at it's it's optimum freshness. Rule of thumb, however, is if it smells OK, it usually won't seriously hurt you.
