I think technically garlic is an herb and salt is a mineral, not spices, but assuming you meant any SEASONINGS - I keep bottles of cinnamon, garlic powder, oregano and a peppercorn grinder right on the stove. I try not to use too much salt. I also have a cabinet full of other spices, herbs and seasonings.

Try these, I don't use them ALL the time...but they are nice to try on lots of dishes: White peppercorn Pink peppercorn Mexican Wood Salt (black in color, looks like pepper) Smoked Paprika Fresh roasted garlic Fresh basil Something to look for are those specialty salts that have flavors to them...we have central market here...maybe whole foods has them...but you can probably find at specialty stores, some don't seem to have much flavor other than "salty", but a lot have strong aroma which can do wonders for food. Also, different peppercorns do have different tastes and a nice fresh black peppercorn beats old boxed pepper any day.
