It was probably a rotten one, peanuts in the shell are the same way, and it never fails when I don't look at one prior to eating it, it will taste like crap! =)

Sometimes they're a little burnt - I love those. How about this one? Anyone ever get a mouthfull of seeds that taste like fuel or gas? I did once and had me a little nervous until hours later I was still ok.

the seeds are removed from the shell one at a time by biting the shell, cracking it, removing the seed from the workers mouth and placing it on a tray to dry. The reason some taste bad usually is caused by bad breath of the employee.

All natural oils can become rancid. http://en.wikipedia.org/wiki/Rancidification Buying seeds as fresh as possible, roasting them, and storing them in a cool dry place with minimal oxygen (for example in a jar with a lid) will help avoid rancidification.

They're horrible when stale. The oil in them goes rancid. +5
