Potatoes are a root vegetable in the nightshade family that can grow in most conditions. Potatoes are mostly water (about 80 percent, in fact) and are high in dietary fiber and low in calories. The health benefits of potatoes are found not only in the meat of the potato, but also in the skin.
Potassium
Potassium is one abundant nutrient found in potatoes, but it is found mostly in the skin. A proper balance of potassium is necessary for the body to function properly. Potassium deficiency can cause cramping and lead to more serious conditions, such as nervous system and heart deterioration.
Vitamin C
Potatoes contain a high amount of vitamin C. Vitamin C is a great immune booster and very beneficial for overall health. A deficiency in vitamin C can cause scurvy.
B6
Vitamin B6 is another important vitamin found in potatoes. Vitamin B6 is important for cell regrowth, brain, nervous system and cardiovascular function.
Manganese
Potatoes are a good source of manganese. Manganese is important in activating the enzymes of the body.
Retaining Nutrients
Baking the potato is the best way to retain its nutritional value. Boiling (unless in soup) washes away valuable nutrients. Fried potatoes also do not posses the same health benefits. Eating the skin of an organic potato may be more beneficial than the skin of one that may contain chemical residue.
