Ham is a moister product. Prosciutto is salted and dried for a very long time. It concentrates the flavors. Plus what the pigs is is different. Ham pigs can eat just about anything. And then hams can be water added and cured or they can be cured and smoked. But they never get to the dryness that prosciutto does.
