Help answer this question below.

Once I have baked a traditional pecan pie, can I freeze it, or will it go bad. Please give suggestions. (there is about 14 days between when the pie has to be backed and when the person wants to eat it (long story)).

    Yes, you can freeze pecan pie. Cook in the usual way and then allow to cool completely before freezing. When it is cold wrap the pie in plastic wrap and then place in a plastic freezer bag. The pie can be frozen for up to four months.
    To use it, simply allow to defrost in the refrigerator. If you want to eat the pie warm you can re-heat it in a low oven - 325°F for around 15-20 minutes.
