Well, I know we did a pavlov's dog kind of thing in one of my classes, where when the teacher raised his hand we ate a finger-full of lemonade powder, until our mouths started watering whenever he started to raise his hand, that might be easy. That might be hard to do with 100 people at a time, but maybe you could vary it somehow (do they learn it faster, or slower, if sometimes you only fake raise your hand?) You could also use something that people are already conditioned to do. I know at my high school, there was a set of 4 doors at the front, right next to eachother, all leading into the same room, but for some reason 90% of people go through the right-most door. If you stand in front of it, they get mad at you, although there's 3 other doors. Could probably get 100 reactions to you being "in the way" in the first 15 minutes of school.

I'd say first think of an aspect of behavior that you're interested in. Is there an emotion or activity that intrigues you? When you decide on something, find out what research has been done. Look for something that would suggest future research, and see if you can find something that would be easy to do, and clarify something already studied.
