Your intentions are good. Is your mother particularly overweight? Why do you think she's going to ruin her health? How about asking her to bring a little less junk food and to substitue with some fruit/vegitables. That way you'd have an alternative to junk food and you could lead by example.

Unfortunately if she doesn't want to stop bringing home junk food, she probably won't. I've had the same problem with my grandmother for quite some time now and she just keeps getting more and more junk food. The only thing you can do is practice self-control and don't eat it. As for your mother I'm afraid she's going to have to make the choice to eat healthy for herself.

C-O-M-M-U-N-I-C-A-T-I-O-N! talk to her about how you feel and your reasons for not wanting junk food available. but remember, she has free will too, maybe she wants to eat junk food and as an adult human being with god given free will(and money to buy it) she can have as much junk food as she wants.

Generally, this is something people have to do for themselves. My mother had a cancer scare, which led her to generally improving her health (though she still smokes o.O). That said, I only rarely eat fast food these days, due in no small part to the effects of watching Super Size Me and Fast Food Nation. They're propaganda films of a sort (SSM especially, though it does include a brief counter-example, someone who's had essentially the same diet for years, rather than 30 days), but the details... I don't think I'll be able to eat another chicken nugget again.
