  • Extra virgin is the healthiest of olive oils because it's the first oil yielded. Oil of lower quality is yielded by extraction under pressure which generates heat and reduces the quality of the oil. When cooking, the problem is when subjecting oils to high heat (as in frying) this chemically changes the oil unhealthily. Olive oils are fairly resistant to this and I have been told by a healthy food chef that grapeseed oil is one of the most healthy and heat-resistant but harder to find.
