I have 2 trains. Each has a transformer. I want to buy a 3rd. train. Can I run all 3 on the same track, and use the transformers that come with the train, or do I use just one powerful one?

This is an involved question, and here's why: If all you wish to do is lash up three locomotives to pull one long train, then all you need is one powerful transformer. When multiple locomotives are on the same track, they all respond equally to the powerpack, but they also equally divide the wattage. You need one amp per engine. Most packs rate between two and three amps, so you should be alright. But, if you're talking about operating three locomotives pulling three separate trains, then you need to become familiar with cab control wiring. This will require multiple power packs. I recommend you by a copy of Kalmbachs "Wiring Your Model Railroad" for the complete instructions on how to do this.
