Two tbsp of olive oil will not make you gain weight. Olive oil is low in the unhealthy saturated fat and high in the beneficial unsaturated fats. It is good for you. I use a moderate amount of canola oil in my cooking and I never gain any weight. I too take 3 fish oil capsules a day. I feel very healthy.

You need fat in your diet, it is essential! Olive oil is great for the digestion and will keep your digestion working, meaning it will help you eliminate regularly. You could also take some Trifala capsules.

Fat is fat is fat. Too much will make you fat. However, monoglycerides like canola or olive have some benificial effects compared to trans and saturated fats. And two tbsp of olive is still 240 calories. The fish oil is calories as well. But we do need to eat some fat or oil each day, so it sounds like what you are taking is good. If the olive oil helps decrease your appetite, all the better.
