Depends. If taste of the oil is important, then Extra Virgin Olive oil or butter (or both). Deep frying, peanut or cannola. High heat I use grape seed oil. It has the highest burning temp of any oil. Calorie wise, fat is fat. Monoglycerides may be more healthy (like olive, canola, or grape) but butter isn't that bad health wise compared to some of the hydrogenated oils.

PennZoil 20W-40, sometimes with STP to prevent smoking. Usually olive oil. If I don't want Olive flavor, or if its gotta be hotter, above Olive smoke point, like deep fat frying, then Corn oil, Canola oil, even peanut oil. Sometimes other oils if I want some particular taste. 'Cept for sesame oil. Bleh. I never open sesame oil.

Depends what I am cooking and how I am using the oil. If it's an Italian meal or for everyday, I'll use olive oil but not if I'm using really high heat because it burns and smokes. If I am cooking something that wouldn't go with the taste of olives, I might use canola. If I'm pan or deep fat frying I will use Peanut oil. Same thing for Asian food, peanut oil, though for some things or for Indian foods, I will switch to ghee or coconut oil. I seem to be using more and more coconut oil. You have to match oil to temperature and food. Sometimes I'll mix butter and oil for extra flavor and less burning.
