Actually, the "once removed" indicates a new generation. So this would not apply here.
Your cousin is your first cousin (for explanation purposes).
With that said, your cousin's children are your second cousins.
Once removed in an example:
Your dad is one generation up from you. Therefore...
Your dad's cousin would be your cousin, once removed.
Your dad's cousin's child is another generation, therefore...
Your dad's cousin's children would be your cousin, twice removed.
And so on...

Your first cousin's children are your first cousins, once removed. First cousins share the same grandparents. Second cousins share the same great grandparents. Third cousins share the same great, great grand parents, etc.
Your first cousin's children share grandparents with you, but they are a generation removed: hence, first cousin, once removed.

Simply your cousins and vice versa.
If this cousin of yours is the son or daughter of one of your uncle's or aunt's then it would be first generation cousins between you and that cousin and I believe second generation cousins for your children.
