The seal may be broken to your sewer drain pipe under your toilet or there isn't something acting as a trap for the sewer gases. Has your toilet been rocking back and forth at all? I'd just try lifting the toilet and replacing the wax ring. That could fix it for you. Or have a plumber do it for you. But it is rather simple to do but kind of awkward and messy.

It could be your septic system is not working. Go to the hardware store and they sell septic "bacteria" in a box. You just dump it in tour toilet and flush it a couple of times. If your septic system is not too far gone it will jump start the system. It can straighten the problem out in as little as one day once the bacteria starts the breaking down process again.

The "traps" in your bathroom are supposed to stop gasses from entering your house. Your toilets is built in, your shower and sink will also haveone. Under the sink its the 'P'-trap, shaped like a U. There would be one for the under the floor. These traps form a water seal in the bottom of the 'U' acting as a plug for the gasses(many think these are for catching hair and things). The vent system ( you see the tops of the vent pipes sticking out of your roof) keeps the water in the traps from siphoning out. Check the vents on the roof. You should smell sewage from those. if not your vents could be plugged somwhere. You could try running a "snake" down them
