It's more than just wires," well also the HVAC person isn't enough, its more than just "air and ducting and that sort of thing." It's gotta duct outside somewhere so that involves a carpenter. If thru the roof ya need a roofer. Ducting out thru a brick wall? A mason. A person specializing in range vents would not be the person to call to re-roof your house, install a furnace system, or build an addition. But the specialist should be familiar with the details of roofing, carpentry, electricity, venting, etc. specific to the job.
