What is the difference between jams, jellies, and preserves?

    My general understanding:

    Preserves are made with chunks of fruit, or whole fruit in the case of smaller fruit like berries.

    Jams are made with crushed fruit, but with nothing removed, and will retain some texture.

    For jellies, the crushed fruit is strained, and only the juice is used. They are usually cooked to a thicker "jelled" state.

    Right you are, Grandma Roses, that squares with the way my mother did it. I didn't say, because I wasn't sure if that was the general practice.
