Please can someone explain why economists believe the economy can continue to grow indefinately even though the Earth has finite resources?

Because growth can occur while consuming the same amount, or less, resources. Growth is represented not only by the resources themselves, but where and how they are arranged. A spoonful of sand on a beach is essentially worthless. The same sand converted into a microprocessor is worth hundreds of dollars. Irrigation nether creates nor destroys water: it just moves it from the river where it is not very useful to the crops where it is needed.
