Well depends on which country you are in. Some countries have a strict regulation on muslim marriages. You will need to convert. But in some other countries, people dont care much about conversion. So, it depends on the country and who u are with.

If you are a man you will be expected to be a muslim in most traditional settings and if you are a women you will not be required to be a muslim. The real question is how well the relationship will work if you disagree about religion and if you plan on having children how to raise them and so on. That is something that requires the two people to have some standards of common ground to build upon and then enough respect for each other to make the relationship work.

Define "be with." No Muslim is really supposed to date, ever. Marriage, yes, but dating is really not part of Islam.
