A pretty close substitute is butter and unsweetened cocoa. Three tablespoons of cocoa and 1 tablespoon of butter will be roughly equal to 1 square of unsweetened chocolate. Incidentally, if you add 2 tablespoons of sugar, it will be roughly equal to a square of semisweet chocolate.
