SUn-dried means just that. First off they aren't just your regular, fresh eating tomtato, they are meaty type fruits, like the roma, Italian ones. THey are cut in half and then dried in the sunshine. It can take a loooong time, depending on how hot your weather is, that's why thisis usualy done where it's sunny and dry, like the Mediterranian. Now you have a sun-dried tomato. SOme of them are then put in Olive oil to further enhance their flavor and preserve them. If you want to use dried tomatoes, you can use them as is, chopping them up and adding to recipes, salads, pizza topping. Or you can reconstitute them in some liquid, though they will never be like they were.
