Salivary glands produce saliva during sleep, usually during dreaming. The body relaxes, i.e. the mout relaxes and opens up, also to aquire more oxygen during the night it might open the mouth releasing any saliva inside the mouth.

Probally because you sleep with your mouth open, and tend breathe through your mouth more than your nose. I do the same thing.

One thing that you can do to somehow reduce the
possibilities of drooling is to NOT eat anything
that is *HOT* before you go to bed

(a book about health/motivation pointed this out,
how the prophet Muhammad looked after his health)

it says 'hot' as in hot porridge, for instance
