Usually when someone says Christianity is not a religion it is intended in a context like "Religion is humanity's work to reach God, Christianity is God's work to reach people" or "Christianity is a relationship, not a religion" or some similar contrast that the speaker believes separates Christianity from other religious practices in some significant way. In those contexts the comment makes sense despite your correct application of the definition in the question. Now, if someone says "Christianity is not a religion by any definition", that person is just wrong.
