How did the early Christian church preach the Gospel before the gospels were written?

They preached it from what they had seen. The "Gospel" as in the message of salvation, and the "gospels" as in the recordings of Matthews, Mark, Luke and John are two different things. They simply preached the message of salvation because they had already seen what had happened in the gospels with their own eyes. You can see evidence of this in Acts with Peter and Paul.
