In a modern court of law, why isn't organised religion proved as fraud by today’s ‘fair trading standards’ legislation? (The products they sell --eternal damnation/salvation-- don't even exist!)

Because Religion does everything it can to avoid inspection. And to make it illegal, if not deadly, to question it. Thus: Blasphemy Laws.

Two reasons. 1 - they don't sell anything. Religion is free. They pass the plate, but you may choose not to contribute. 2 - it cannot be proved that eternal damnation and salvation doesn't exist. The witnesses would all have to be dead!
