Being a coeliac you can get it right from the horses mouth: Basically Wheat, Rye, Barley and some Oats including any of their derivitives e.g.Barley Malt. Some of these cereals are treated and Codex rated to bring them into tolerant levels,then used by firms who make special gluten free foods (most of which are VERY expensive)coeliacs are allowed so much basic food on prescription through the NHS here in the UK. We have to be very careful with ready made foods,most of which contain Wheat,for thickening. So, we can eat Corn , but would you believe not some Corn Flakes (including Kellogs)which are coated with Wheat to make them crispier.....its a minefield. Thank god for Vegatables,Fruit and Meat.
