If you have taken whatever steps the court regards as appropriate - and a recorded letter sounds to me entirely appropriate - then the court may well make a judgement in absentia - depending, of course, on your case. This does make it likely that you will have difficulty in enforcing whatever judgement the court makes.
You might win if your claim has some merit, but in many cases businesses have a right to not refund you.
