It is a piece of meet cut from the tenderloin, usually butterflied (cut so that some connective tissue holds the two halves together when they are laid out side by side). Sometimes there is a piece of bacon wrapped around the outside edge. The meat is about as tender as it gets. . I had some for dinner as it happens. Delicious.
