Vinegar is made from the oxidation by acetic acid bacteria of ethanol in wine, cider, beer, fermented fruit juice, or nearly any other liquid containing alcohol.

vinegar is made when spores of a wild yeast come in contact with a liquid and begin to reproduce. Apple cider vinegar is made when the spores form on apple juice, for instance. A lot of times it happens naturally, just by exposing juice to the air in your home, for example. I made cherry wine that the spores got into and turned to vinegar. It's very strong! Still have about a gallon of it as I started with 5 gallons of juice. I have to water it down to use it. Doesn't taste much like cherries but has a unique flavor.

There are different kinds of vinegar. The "natural" kind is from wine or cider that has been allowed to "go to vinegar" by oxidation. Vinegar (acetic acid) can also be produced cheaper by chemical distillation. Wine vinegars are used primarily for cooking and salad dressings. You can use the distilled vinegar for that, too, but the flavor suffers.
