Both are correct. Depending on the country you live in. I am American but have lived in Canada for a number of years. I am more attuned to spelling color as colour as I also do with neighbour and other such words. My eyes vary from deep blue to blue/gray occasionally they are quite gray.

In UK, it's colour. Mine are blue, but I'mm currently trying out some mind exercises to learn Biokinesis, so I will have the ability to change my eye colour to red. I will then be the only one with red eyes. I love being weird.
