My favorite way is when they are diced up mixed with red peppers and white onions, drizzled with oil, and seasoned with salt and pepper... then baked or broiled. It's a close match with a good ole loaded baked potato though.

yes roasted with the meat they will be served with. they absorb the wine, the spices, the garlic and onions I use with the meat. I pour water over the lot and part steam them. after the potatoes are cooked I take them out and drown the meat once more. When the water has boiled away, the meat is ready, and the residue can then be turned into the best gravy.

on the grill-- whole potato sliced almost all the way through several times in a row, but buuter and a drizzle of olive oil between each slice, sprinkle with garlic powder,pepper, salt and some crumbled bacon, wrap tightly in a piece of foil, grill until soft ,unwrap, top with sour cream or cheddar cheese,scallions, if you like, they are yummy

I have to be a little different here, I absolutley love raw potatos, I'm unsure how good raw potatoes are for consumption, but yeah they are really nice =)

My Mom's recipe on the grill was; slice about six medium potatoes and two large onions, layer these on a large piece of tin foil and season with salt, pepper and margerine (about 2 tablespoons), use about 1/3 cup a water. Cook this wrapped in the tin foil on your BBQ grill for about half an hour or until potatoes are tender. Great with steaks or chicken.

I am, being Irish, genetically predisposed to being addicted to potatoes. I LOVE "boxty" - a kind of potato pancakes, and Latkes, a Jewish potato pancake. I also dig Au Gratin, and scallopped, and mashed (with free-range chicken broth is best!!) and grilled, and roasted, and baked "fries" (I don't actually fry food too much anymore, save for my boxty) and as a veggie in Corned beef and cabbage, along with carrots and celery...
