Why does lengthy criticism comes so easy and two words of appreciation so difficult?

The first thing I could think of: pride. However, there must be layers and layers of reasons. It is too much for my little brain to interpret.

Now that is an excellent question. I don't know, but I practice with my kids a lot on trying to reinforce the things they do well and good contributions that they make. Hubby and remind each other to give as much positive feedback as possible, so when we have to give constructive criticism, it's not so overwhelming.
