It depends on their altitude. Planes have to be in cold air to leave contrails and rest assured that high above the Hawaiian islands it's plenty cold. You'll even find snow on some of the mountain tops beginning about 9000 feet. In the image below you'll see the snow cap on Mauna Kea: -
