I could really not care less about environmental issues and/or animal rights. Does that make me a bad person?

I wouldn't say bad. A lot of people don't care until it impacts them. Just maybe selfish.

I would say very self centered. You obviously don't have children as you don't care about environmental issues (I don't either, but I care about how I leave this planet for future generations). I would say that your stand (or lack of one) on these issues is a big part of the problem with society today. Look out for number one, and if it doesn't effect me directly, who cares. I think much of it stems from poor parental upbringing (I'm not saying this applies to you necessarily). It's good that you are aware, and can admit that you just simply don't care. I give you credit for that! I don't think we can judge whether that makes you a bad person - you aren't directly killing and torturing. Let's just say you aren't as good of a person as you could be. We all have choices.
