When I was learning (and even now), probably some of my favorite ones were Normal Dello Joio's. He wrote some fantastic animal pieces... Kind of like the easy version of Camille Saint-Saens' carnival of the animals.

Another one I would suggest is "Fur Elise" by Beethoven. All students want to play this song. I don't know how well you play, but I think you could learn this after you get going. It isn't a beginning piece, but a little more difficult. http://www.youtube.com/watch?v=dJ3ba9zwx6c&feature=related
