I once went to a Chili festival.. They sat and ate a few hundred chili peppers.. the crowd cheered a heap so in the end I gave it a try. You pick them up with your fingers and eat as many as you can! My head tried to explode and I rubbed my face because of the heat. then my face started to burn.. I went into the loo and washed my face but I had also had a piddle. then my pecker started to get hot and things went quite bad.

So, how do you make it? -

I answered that one. I usually just buy it but those are diluted. I just use habaneros and enough vinegar to make it blend. Then dilute it as I go depending on what I'm using it in. I used to chop the habaneros and put them in my mayo. I have some in ice cube trays now freezing. I have some in the oven roasting. Basically I bought a bunch of habaneors because I seldom get to go to a store that has them and I'm experimenting. Do you have a favorite habanero sauce recipe? -

I just use them in a blend with pico or cooked salsas. Usually 4 tomatoes, half a small onion, 2 jalapenos 2 serranos and 1 habanero with a small clove of garlic, some chopped cilantro juice of 1 lime and salt to taste. Chop it all up and serve as pico de gallo. or cook them on a grill and blend them or mash them in a molcajete, except for the lime and cilantro, add that in after the rest is cooked. Either one is good on tacos or chips. -
