slice them, or whatever you're doing with them and sprinkle liberally with salt, leave for 10-15mins, this will draw out the liquid that tastes bitter. Rinse well before cooking. Enjoy.

I cook them in slices in olive oil with other veggies. They turn out delicious everytime without any bitterness in them :)

Try soaking them in salt water for a while. Won't remove all the bitterness but quite a lot is reduced.

This won't answer the bitterness question - but this is how to cook them - slice into 1/4" slices, then dip in egg, then italian bread crumbs, put them in a skillet - cook both sides - when they are ready to eat - put some cheese - weird but I like velveeta, or swiss, or chedder - let the cheese melt and take them out of the skillet - yums!
