• Good question. Cut them in cubes, add some salt and keep for sometime. Wash them and fry them like you would do the french fries. Take some onions, cut in slices, add some garlic and ginger paste. add salt, pepper, and cumin powder. Add fresh tomatoes and toss the fried yam into the gravy. Cover, simmer and keep for few minutes. Sprinkle some chopped coriander leaves. Eat with Pita bread or serve with bed of rice.
  • How about baked yams? Just wash it off and put it in the oven for 1 hr. at 400 degrees just like a baked Idaho potato. Eat with a little butter. Or you could boil them and make like regular mashed potatoes or don't mash them and make candied yams. Put some brown sugar, butter and cinnamon in a pan - heat and then add the boiled yams.
  • Roasted in their jackets and then either peeled and sliced or scooped and and mashed. Or just eat them right out of their skins.
