If a man tells you that he "really likes you" and says that you are an amazing woman, what does that usually mean? Someone said that "really likes you" is guy-talk for that they are falling in love...? Do guys really talk differently in relationships?

Every guy is different but generally men think and talk about relationships much differently than women. Without any more context of the conversation, it sounds like he indeed really likes you, but if I were in your shoes I would go more on how he expresses affection and body language. Whether or not he feels he is falling in love, it's very hard to tell from just these words.

How long did it take him to reach this conclusion. First date. A year? That might tip you off. This is "guy talk." He is "fishing" for a response from you. The nature of the comments are a bit tentative, so you really need to consider his motives. Maybe he is sincere, but being careful. Trust your instincts on this one. You are the expert.

Naaahhh...I know this one. Yes, men do "talk differently", and EVERY time I have heard "Amazing Woman" from a man, it was an expression of "long term interest". "Amazing Woman", in my rather extensive experience, is reserved for the "Amazing Woman" that a man will be telling his friends about. A high compliment...much better than "the shizzel".
