I have to say the skyscraper. Although the construction of skyscrapers really began in the 19th century, it wasn't until the 20th century that advancements in structural engineering really allowed for the skyscraper boom that resulted in the magnificent skylines of cities like New York and Chicago.

I would say the Panama Canal. "Built by the United States from 1904 to 1914, the Panama Canal posed major engineering challenges, such as damming a major river and digging a channel through a mountain ridge. It was the largest and most complex project of this kind ever undertaken at that time, employing tens of thousands of workers and costing $350 million." http://encarta.msn.com/encyclopedia_761559188/panama_canal.html It has made world trade much easier.

The greatest engineering (and human) acheivment of all time surley was the first moon landing (If it happened, otherwise it was the greatest hoax), and it needed to make use of many underdeveloped or yet to be developed technologies. The engineering and scientific work undertaken in such a short space of time was also amazing. I think it will be a long time before a greater engineering achievment is accomplished. What could that possibly be?
