Why is 'wood' used so frequently as an adjective? Shouldn't it be 'wooden door' and not 'wood door'?

I think you are right. Though you could argue that "wood door" is a compound noun... I think wooden sounds more appropriate, though. I judge grammar from the gut and am frequently correct.
