It depends on the size of the establishment. However, there is almost always a staff member assigned to wash dishes either by hand simply by cleaning off plates, pots and silverware and feeding them through the machine. In my experience, most smallish bars and restaurants rely on hand washing.

I've never worked a bar that had a dishwasher... I've never worked a restaurant that didn't...

In my couple dishwasher jobs, there was an automatic dishwasher for stuff like plates, glasses, flatware and the such. Pots, pans, and similiar items were done by hand.
