  • Sweet potatoes are the easiest and best in my opinion by simply poking them a bunch with a fork, rubbing all over with butter (I use ghee or duck fat usually), coarse kosher salt, and pepper. Just have to put them in a dish in the oven at 400 for 45-60 minutes, depending on the size. The huge ones would take longer I'm sure too. can tell by inserting a knife at the end into the middle, to check how soft it is. Not sure if that's what you're after, but why mess with a good thing? :)
  • Oh yeah.. For squash, try roasted butternut squash soup, same sort of idea.. Cut up a butternut squash into big chunks, rub with fat, salt, pepper.. Then roast in the oven for an hour or whatever (400 again is fine) then take the chunks, puree the chunks, strain if you care, then mix in some chicken stock, cream, season to taste.. Mmmmmmmmm.
  • Easy Spicy Squash soup Ingredients 1. 1 butternut squash, peeled and chopped 2. 1 chopped onion 3. 1 tab ground cumin (or your favourite curry powder) 4. 1 tab ground coriander 5. 2 pints water 6. 2 chicken or vegetable stock cubes. Directions 1. Put everything in a pan, bring to the boil, cover and cook for 25 mins. Liquidise.   • I like to slice up sweet potatoes and acorn squash into half inch thick slices and place in a roasting pan. Drizzle with melted butter and roast until tender. When you pull them out, add a bit more butter, brown sugar and cinnamon.
