Yes, it's possible. There are several applications available to undelete files and to spy on other people's computers. PC Inspector File Recovery is one of the many applications which allow you to recover deleted files. A similar question is here: http://www.answerbag.com/a_view.php/9468

Let me add - you can only use file recovery tools to salvage files when the space those files occupied is still unoccupied. Your operating system doesn't actually delete a file when you ask it to (even when you empty the recycle bin), it just labels the space the file used as available for any new files that will be stored in the future. It's kinda like putting a 'this space now available' sign on your office door while you're still sitting at your desk pondering why you got laid-off. If no new file has begun to occupy the old file's territory, recovery is almost certain. If new files have overwritten any of the file's space, recovery is unlikely. What I'm trying to say is the longer you wait to try and recover a deleted file, the less likely you will succeed.

Generally speaking, both answers are correct. However, it is possible to recover data which has been overwritten, even several times, with specialty hardware and software. The existence of such processes are why governments and militaries degauss and shred whole hard drives when they're decommissioned. As in, physically chop the drives into little bits. Some data recovery specialists can bring back files that have been deleted or corrupted for years. It's very expensive, but if you MUST have your data back, chances are someone can do it.
